Caramelized Bananas Chiffon Cake 





Preheat the oven to 165 C 

1. Caramelized bananas

200 g bananas sliced
65 g brown sugar
30 g butter
10 g rum
20 g whipping cream

1. Heat brown sugar in medium skillet over medium heat , when a haft of the sugar melt 
add butter sliced bananas
2. Stirring and continue to cook until butter/ Sugar mixture starts to caramelize
add  rum and whipping cream stir well for 2-3 minutes turn off the heat.
3. Use the mixer to blend calamelize banana until very fein, let it cool.

Preheat the oven to 165 C 

2. Meringue
190 g egg whites
60 g sugar

3. Cake batter
100 g flour + 3 g baking powder , sifted
4 egg yolks
40 g sugar
50 g olive oil
20 g whipping cream



1. Beat the egg whites with sugar until soft peaks form
2. In another Bowl eeat egg yolks with sugar until lighty creamy 
3. Add calamelized bananas, olive oil and whipping cream beating well.
4. Add sifted flour and baking powder mix well. 
5. Fold the meringue into the batter , add the meringue in 3 addition
    use the spatula for the second and the third part
6. Pour the batter into a chiffon pan (17 CM diameter)
7 Baking temperture 165 C for 15 minutes
                                  130-140 C for 40-45 minutes

After baking,remove from oven
and cool completely upside down in the pan

Coat the cake with
caramel whipped cream frosting
and decorate with caramelized bananas
edible Lilac flowers  , Macarons
