 Sauerbraten / German pot roast / German Marinate Beef 



Preparation of marinated German Sauerbraten

Ingredients for Marinated Beef
1 kg Beef
550 ml Rotwein
500 ml Raspberry vinegar
200 ml Vegetable stock
2 Onions 
1 Carrot 
10 juniper berries ( Wacholderbeeren )
5 Pimento ( Piment)
5 Clove ( Nelke)
2 Bay Leaves ( Lorbeerblätter)
1 Tbsp Salt
1 Tsp Sugar
Rosemery 

1.Mix Rotwein, Raspberry vinegar and Vegetable stock in the large Bowl adding salt and suger mix well.

2.Cut Onions and Carrots  into a  chunky pieces and add into the Red wine mixture, add  juniper berries ( Wacholderbeeren ),Pimento ( Piment),  Clove ( Nelke) , Bay Leaves ( Lorbeerblätter) and Rosemery after that place the beef into the bowl gentry mix them and transfer into a plastic bag or a box and leave it in the Refrigerator at least 5-7 days. Recommentation is 21 days!!!!



On Cooking day you will need
1 Tbsp Olive Oil
1-2 Tbsp Tomatoes Paste
1 Carrot 
1 Leek 
1/2 Cerely Knob
1 Onion
20 g Butter
Salt and Papper 
Cut all vegetable into a chunky pieces.

Process
1.Take the beef out from the marinated and dry the meat with a kitchen paper towel, seasoning with salt and Pepper.


2.Place the pot over the heat and adding Olive Oil and put the beef into the pot, roasting on all the side until brown and remove the meat out from the pot.


3.Add all vegetable ( Cut into a chunky pieces) and cook them for 1-2 minutes and the add the vegetable from the marinated beef into the pot and then add tomatoes paste stir well.
4. Add butter and let the butter melt after that place the meat into a pot, pour the marinated juice into the pot cover with the lid.


5. Put the pot into a preheat oven
6. Temperature of the oven 200 C  for 2 hrs.


For the sauerbraten sauce
Gravy from the Roast Beef 
2 Tbsp Honey
60 g Raisins/ Sultanien
Salt and Black Papper
1 Tbsp Cornstarch 
1 Tbsp Water

1.pour the stock into a sauce pan, bring them to boil and then add  Raisins/ Sultanien let them cook until softed.
2.Add Honey and seasoning with salt, pepper 
3. Mix cornstarch with water and pour into the sauce pan continue stirring to make the sauce thicken.

You Can Serve Sauerbraten with German Potato Dumpling and Red Cabbage
